Winemaking report:

We let the must of Muscat with the skins for some days in cool temperature before the fermentation. After the end of fermentation we put the wine (of Muscat) into small amphoras for some months. The next year we add fermented must of Moschofilero to the wine in bottle provides the sparkle and lees-y feel as it gets turned into alcohol and CO2, and not disgorging makes it hazy, creating broader palate weight, pleasing textures, and balance throughout. This special bottling is done entirely by hand.

Aging potential:

Aging potential up to 2 years. This special wine should be opened and enjoyed cold.

Ideal serving temperature between 5-8ο C.
